Easy Cheesy Ham and Potatoes
Have you ever looked in your refrigerator and see a pile of leftovers that no one will touch? I have found one way to get my family to eat leftover ham after we are all ham sandwiched out. I simply make Easy Cheesy Ham and Potatoes.
This recipe started out as a hand me down from my mom. The original was just ham, cheese, and potatoes. As a result, there was a lumpy cheese mess, and the cheese never melted throughout. So by using milk with some flour, we have created a creamy sauce that will evenly distribute throughout the potatoes.
Also, one thing that I love for this dinner is the skill level is super easy. The actual hardest part is thinly slicing the potatoes by hand. I have found if you have an adjustable mandoline this will make slicing the potatoes much quicker and easier. Just make sure that you watch out for your fingers because you do not want a trip to the emergency room for stitches.
Due to this meal being so easy to make, it is great for moms on the go, moms who love simple but filling meals. This meal is also great to make for someone who is under the weather, as reheating it is easy also. I will eat the leftovers for breakfast or even lunch. Plus my super picky husband can usually take some with him to work. We are currently a family of 5, therefore, I easily get a full dinner as well as lunch for me and husband for day or two.
In conclusion, I really hope that you try this super simple meal. Some great side ideas would be green beans and cornbread, broccoli and dinner rolls, or corn and salad.
