My Favorite Healthy, Creamy, Dairy Free SouthWest Soup

Since going dairy-free 2 years ago and starting new eating habits this year, I have sorely missed creamy soups! Almost all the yummy ones at the store or restaurants or even online have dairy in them, you know milk, butter, cream, all the good stuff I can’t have! If dairy doesn’t cause my frustrations extra salt, ingredients I can’t pronounce, fillers, do! Often times, soups have dairy and all those other nasty ingredients!
I looked all over the internet to find a good recipe and was able to make some changes to one in order to make it less spicy. (Even though I grew up in New Mexico and Arizona, I’m a gringo, lol.) When I found this soup recipe I got really excited about it, and guess what? This is the most amazing soup ever! It was so yummy! It’s dairy, soy free, gluten free, and you can make it corn free too!!! It can even be vegetarian! Best of all, it only takes 20 minutes to make!
When I first saw the recipe, I questioned how in the world it could be creamy without dairy? The secret is the pumpkin! It makes the soup creamy and you don’t even notice the pumpkin taste because of the yummy homemade salsa and other spices! As a bonus, you are sneaking in the vitamins and nutrients of the pumpkin and no one will ever know if you don’t tell them. I also love how versatile this recipe is. Don’t like corn? That’s ok, take it out and put something else in! Do you want to add bell peppers? Go for it! Do you want to make the soup spicey? Add jalapeno or more chili powder! The possibilities are endless and yummy!
- 4 cups of broth, chicken or veggtable
- 1 tsp garlic powder
- 1 tsp cumin
- 1/2 tsp chili powder
- 1 15oz can of 100% pumpkin puree
- Shredded chicken, about 2 breasts worth
- 1 15oz can black beans rinsed and drained
- 1 cup frozen corn
- 1 cup homemade salsa
- Tortilla Chips
- Bring to boil broth and spices.
- Add in pumkin and mix until combined.
- Add the other ingredients and stir.
- Bring to boil and then reduce heat and simmer for 10 minutes.
I crushed up 4 tortilla chips in mine and it was divine! It was a big hit with my husband and a bunch of my dairy-free friends! I can’t wait to have it again!
